Caramel Apple Pie Recipe

This is one of my favourite pudding recipes. No matter how stuffed I am after a Sunday roast, I can always find time for pudding. I kind of feel a bit healthy choosing apple pie even though its covered in caramel, the apples are still part of your 5 a day, right?

This Pie has a sweet pastry base, topped with a tart apple filling, covered with a layer of caramel and topped off with a layer of cinnamon crumble.



250g Plain Flour

50g Icing Sugar

175g Cold Unsalted Butter

1 Egg (mixed)

Apple Filling:

4 Medium Apples. Granny Smiths are great for this recipe but any apple will do.

Caramel Topping:

50g Butter

50g Muscovado Sugar

400g Condensed Milk


170g Butter

280g Self Raising Flour

1tsp Cinnamon


Pre heat your oven to 200° (fan 180°)

Grease a 10" flan dish.

For the pastry, sift together the flour and icing sugar into a bowl. Add the butter and use your hands or a food processor to make mixture that resembles breadcrumbs.

Mix the egg (keep a little bit to the side) and add it to your mix. Gently knead together to form a dough. Wrap the dough in cling film and pop in the fridge for 15 minutes.

While you pastry is chilling make your apple filling. Peel, core and slice your apples, Pop them into a pan add 2 tablespoons of water and simmer on a low heat for about 10minutes. The apples should be soft to touch but not falling to pieces.

Drain any left over water and set aside.

Grab your pastry from the fridge. Roll out the pastry, about the thickness of a pound coin and gently transfer to the greased flan dish. Place a piece of baking paper over the pastry pour on some baking beans (you can use rice) and pop in the oven for 10 minutes. Remove the baking beans and bake again for 10 minutes.

Remove the pastry from the oven and use your left over egg and brush it over the warm pastry.

Next make your crumble mixture. Add your butter, flour and cinnamon to a bowl and rub between your fingers to create your crumble mix.

Now make your Caramel. Add your butter, sugar and condensed milk to a pan. On a medium heat melt all of the ingredients. Once melted increase the heat and keep cooking for about 5 mins. You must keep stirring the while the pan is on the heat otherwise the the caramel will burn! Remove the pan from the heat,

Now spread the apples evenly over the pastry base. Pour your caramel filling over the apples and then sprinkle over the crumble mix.

Pop it back into the oven for half an hour,

You can pop it under the grill to crisp up the crumble but only for about half a minute and keep an eye on it as it will burn.

Enjoy with, cream, ice cream or custard! It's also delicious on its cold the next day.
